Our beef are 100% grass-fed and grass-finished; they’re moved daily to fresh pasture in an intensive rotational grazing system.
Beef shares are available at limited times throughout the year; we are currently taking reservations for shares available in Nov/Dec 2023.
Beef shares are $5.99/lb hanging weight (the hanging weight is calculated after slaughter, but before cutting). For example, for a 1100lb live steer, the hanging weight will come to approximately 600lbs. If you’ve reserved a quarter share, you’ll pay $898.50 (150lbs hanging weight x $5.99/lb) to us at Belvedere Farms (of which $250 will already have been paid as your deposit).
When the beef is ready for harvest, we will deliver the animal directly to the butcher. The beef will hang for approximately 14-21 days after harvest. During that time, the butcher will call you directly to confirm your choice of cuts (we provide a detailed document to walk you through the entire process and help you determine which cuts will best fit your needs).
The butcher will also notify you when your meat is ready and you will pick it up directly from them. Turn-around time is usually a week for fresh cuts and about 3-4 weeks for any cuts that need to be cured and/or smoked.
You will pay us at Belvedere Farms directly for the beef (we will notify you of the final price soon after the beef goes to harvest and we have the actual hanging weight) and you will pay the butcher directly for the processing.
Processing costs include: slaughter fee ($130) + hauling fee ($25) + base rate of $0.80/lb hanging weight, plus any additional fees for curing, smoking, patties, etc. depending on the type of processing you request. (Please note: these fees are determined by the butcher and are subject to change).
