Our pigs are spoiled. They eat the very best of all the things.

And happy pigs are delicious pigs.

They are fed non-GMO organic barley, all the excess garden produce they can handle, and rich creamy milk and whey from our Jersey milk cows.

 

When is the share available?

Pork shares are available at limited times throughout the year. We are currently taking reservations for shares available in November 2022.

When the pork is ready for harvest, we will deliver the animal directly to the butcher. The butcher will then contact you directly for your cutting instructions. Turn-around time is usually under a week for fresh cuts and about 3-4 weeks for any cuts that need to be cured and/or smoked. Unless you specify otherwise, it will all be frozen when you pick it up so it can go directly into your freezer.

 

How much does a whole hog cost?

Pork shares are $4.99/lb hanging weight (the hanging weight is calculated after slaughter, but before cutting).

For example, for a 250lb live pig, the hanging weight will come to approximately 180lbs. If you’ve reserved a whole share, you’ll pay approximately $890 to us at Belvedere Farms (of which $100 will already have been paid as your deposit). We will notify you of the final price soon after the hogs go to butcher and we have the actual hanging weight.

And you’ll pay approximately $240 directly to the butcher in slaughter/hauling/processing fees (though depending on the processing/curing you’ve requested, it could be a little more). If you budget $1200-1300 for the whole hog, you’ll be in good shape.

Processing costs include a slaughter fee ($65), and a base rate of $0.79/lb hanging weight, plus any additional fees for hauling, curing, smoking, etc. depending on the type of processing you request. (Please note, these fees are determined by the butcher and are subject to change).

I drove down to the vet’s to pick up meds for a sick heifer and since it takes me right through Amish country, I couldn’t resist stopping at a farm just off the road to pick up 10 quarts of small but luscious berries (the small ones are sweetest, I think).

Harvested rhubarb from the garden and a couple hours later : strawberry rhubarb jam.

When you’re filling shelves for the winter, every little bit counts.

And yet, I’m pretty sure my kids all think we keep barn cats for the kittens.
.
There’s a new litter every spring and so far we’ve always been able to give enough away to keep from being overrun. Their momma, Scout, is a phenomenal mouser (and catches birds and squirrels and chipmunks too) and earns her keep many times over.
.
So much so that when she decides to give birth, she finds a spot in the basement and we let her come and go as she pleases while the kittens are teeny. That in itself is a testament to her place on the farm.
